Just seen some bloke from Glasgow on the news who has won best pizza maker for the fourth year running. He explained how the neopolitan is the best pizza too. The tomatoes he uses are special ones that only grow in Naples. What are they and can I get some here? Also suprised that he can't get a wood oven due to his council. So instead of 500 degrees and smoke flavour, he cooks at 300 degrees in a normal oven. Do you have a wood oven?

I'm sure you could source the tomatoes from Borough (London Bridge) or Chapel St (Angel) markets, both really good places for produce, speak to the grocers there and they'd probably be able to order some in for you if they don't stock them already.

We have two gas assisted wood fire ovens, i'm guessing he can't get the wood fire ovens because of h&s issues with the building.
We use two gas assisted woodfired ovens supplied by wood stone. 2 very expensive pieces of kit (35k each).
I try and cook my pizzas at above 300degrees C (600degrees F), it takes skill to maintain a consistant heat as the more pizzas you cook, the more the oven temp will drop. The coals will help maintain the residual heat in the oven floor while the gas keeps the roof temperature up. Having the two temperatures balenced will give an evenly cooked pizza on the base and the toppings whilst keeping the residual heat consistant.

Thanks, I keep on meaning to go into london veg shopping but it's been too cold, no fun. If you are unable to produce an evenly cooked pizza, or are suffering from soggy bottom, maybe you should invest in one of these. Hope this helps lol.
